Part 2... As promised!

Ingredients:  (CORNBREAD)  
***I doubled all ingredients below to make 2 pans cornbread***
(Ingredients below makes only 1 pan cornbread)
1 C. All-Purpose flour
1 C. Yellow Cornmeal
2/3 C. White Sugar
1 tsp. Salt
3 1/2 tsp. baking powder
1/3 C. Vegetable oil (I used olive oil-EVOO)
1 C. Milk
1 Lg. Egg

Mix all liquid ingredients in a bowl... (eggs, oil, milk) and set aside...
Then, in a large bowl, mix all dry ingredients together.
Then add liquid ingredients to dry mix.
Oops... I forgot to add the sugar to the dry ingredients... Guess I'll do it now:)  Don't worry, it doesn't affect the flavor or texture by doing this:)
When ingredients are mixed together, your batter will look like this...

As I said before, I doubled the ingredients to make 2 pans... If you did this, use two 9" round pans and divide the batter between the two pans or you can use a large rectangular dish.  (Make sure you spray the bottom and sides of pans with olive oil spray)



Then place the batter filled pans in oven and cook 20 min at 400 degrees.  (Be sure to set your timer) or until top is golden brown.
***Oven temps vary, so after 20 min, check the cornbread.  The top may be golden brown, but the center may be gooey, so at this point I loosly cover the tops with a sheet of aluminum foil and cook another 5-10 min. until toothpick inserted in center comes out clean***

When I remove pans from oven, I glaze the tops with butter to taste (not necessary, but very yummy!!!


Serve with heaping bowl of chili, and you can add condiments of choice... I added a bit of sour cream and shredded cheese... It was delicious!

My husband likes to heat leftover cornbread and cover with melted butter and syrup... southern desert:)

Ok, so the weather is getting crisper with fall in the air!  Love this time of year!  So I thought a little comfort food would be fitting... Skinny girl is in North Carolina, and the weather is cooling off there too...maybe this will remind her of home)
 (Part 1)
Mama's Chili and Texas Cornbread!

This Chili is yummy and very versatile.  I used lean ground beef this time, but you can use anything from ground beef, to ground chicken or turkey or stew meat.  What ever your heart desires... Just go with it!  Mmmmmmmmm... I can almost taste it...



 Ingredients: (CHILI)

1.5 lbs. Lean ground beef (or your meat of choice)
1 med. yellow onion (chopped/diced)
1 14.5 oz can stewed tomatoes (with juice)
1 14.5 oz can chopped tomatoes (I use chopped tomatoes with garlic, oregano and basil)
1 16oz can pinto beans (I prefer Bush's brand- they tend to be lower in carbs & sugar) or any beans of your choice.
1 16oz can black beans (Bush's of course- but any brand will work)
2 tbsp. minced garlic (you can use less or more- I actually used 2 heaping tablespoons-I love garlic!)
1 7oz can mild diced green chili's (not pictured above- I forgot to put it in the photo)
3 tbsp montreal steak seasoning (or seasonings of your choice)
3 tbsp chili powder
pepper to taste
2- tbsp olive oil

First- add olive oil to pre heated skillet and add chopped onions, cook until slightly softened.
Then add ground beef and garlic, and steak seasoning, mixing thoroughly until onions have softened and beef is completely browned.

After beef is completely browned, begin adding canned tomatoes...

 And green chills...
 And chili powder...
 and pinto beans
 and black beans
Simmer on low heat, stirring frequently.
